Banquet Menu #1 – Mexican

Impress your friends with a multi-course Mexican menu. (Click on item for recipe info).

Con queso dip, guacamole and fresh salsa

~

Black bean quesadillas with mango salsa

Roasted corn salad

~

Tres leches cake (quick and easy, or more decadent)

Or

Once scoop of mango sorbet served with a shot of tequila and a lemon wafer

 

Tips:

  • The con queso, corn salad and tres leches cake can be made a day in advance
  • The dips may seem like a bit of work, so substitute store-bought salsa or simply leave one out to keep things simple
  • For the corn salad, use feta for a cheaper alternative to manchego
  • If mangos are out of season, canned local fruit is usually a more sustainable option than imported
